Sharing one of my fav easy go-to lunch salads! So quick and easy and so delicious π Ingredients: β’ 1 bunch chopped kale (I mixed kale and romaine) β’ ΒΌ cup fresh lemon juice β’ ΒΌ cup olive oil β’ 2 garlic cloves crushed β’ Salt and pepper to taste β’ red chili pepper flakes to taste β’ ΒΌ β Β½ cup grated Parmesan cheese β’ ΒΌ cup toasted bread crumbs (optional) β’ Grilled chicken, salmon, shrimp or protein of choice Instructions: β’ Whisk together lemon juice, lemon zest, olive oil, garlic, chili flakes, salt and pepper in small bowl β’ Add kale, romaine, spinach, whatever youβre using to a large bowl β’ Pour dressing over kale and add half of the cheese β’ Toss to coat evenly β’ Top with remaining cheese and breadcrumbs β’ Add protein of choice and enjoy π
